omg I made this jacket sweet potato with smoked tofu slaw & crispy chilli mayo over the wknd & it was totes life changing 🤩! I used regular firm tofu instead of smoked and traded coriander for parsley since I had some leftover from my mum's garden 🌱. The chipotle mayo tho is EVERYTHING 💥... I mean I'm not gonna lie I accidentally added too much lime juice & it got a lil too sour 😂 but still soooo good! the best part?
